Food and Environment, What's Up With That?

After reading through the various articles in the Universal Declaration of Human Rights, I was quite surprised that 2 of the main human securities, food and environment, were barely mentioned throughout the entire declaration. Food is one of the most vital securities because all humans cannot live without nutrition, and the environment is extremely crucial simply to live in security and health. So why did the declaration fail to mention such important securities? After re-thinking the situation and reviewing my research, I have come to the conclusion that problems such as food or the environment were not nearly as evident back in the 1940's as they are now. It was assumed that food is something everybody has, and the environment works in it's own ways. Massive famines and hunger was more foreign to society, and obviously the environment wasn't necessarily on the radar because global warming or how humans effect the environment wasn't even considered yet. It's interesting how now food and the environment are 2 of the most crucial human securities.
