What about food and the environment?

While reading the Universal Declaration of Human Rights I was shocked that the environment and food made no appearances. To me those are up there on the list of the most important, but here they aren't even mentioned. After thinking and doing a little research it occurred to me that the environmental movement did not really take off until the 60's. Before this people were not really aware of the importance of protecting the environment and how it could effect us. On the topic of food I struggled to find a reason for its absence. However it is possible that it was overlooked on the account that it is a problem that has always been present and would be very hard to fix.
